The wonder of wasabi

Did you know the amount of wasabi applied to squid and fatty tuna different?
1. Wasabi loses its distinct flavor when paired with fatty fish, so you will not taste the spiciness as much.
Example: Red Snapper, Tuna, Yellowtail, Salmon

2. A small amount of wasabi is enough to taste the flavor with less fatty fish such as squid, octopus and shellfish.

When you mix wasabi with soy sauce, the equal amount of wasabi will be applied to all of your sushi upon dipping. If you need extra wasabi, add a small chunk of wasabi on top of the fish.
Fatty fish such as tuna and salmon leaves fat in your mouth so you wouldn’t feel the flavor and aroma of wasabi as much when you eat them before squid and other less fatty fish.
We recommend that you start with a white fish or squid, then move onto silver fish, then onto fish with a heavier flavor.
